Tomato Soup

Another tasty recipe supplied by my sister-in-law.  This is also another one that freezes well for lunches.  It calls to be pureed but the consistency level is up to you.  We prefer a soup with some chunks.

4 cups tomatoes
1 onion
2 carrots
1 green pepper
3 cloves of garlic
Basil
Salt and pepper
3 cups tomato juice
1 cup chicken broth

1.      Saute all the vegetables.
2.      Combine all ingredients and allow soup to simmer over numerous hours.
3.      Puree soup with hand mixer to desired consistency.
