Crème Brulee

We aren't having this for supper tonight as there is lots of soup left.  So today I'll throw in a dessert recipe that we have for Special occasions.  It took many attempts but I can finally make a good Crème Brulee.  The consistency isn't always perfect but the taste....

6 egg yolks
6 tbsp white sugar
½ tsp vanilla extract
2 ½ cups heavy cream
2 tbsp brown sugar (I use raw white sugar)

1.      Preheat oven to 300 degrees
2.      Beat egg yolks, 4 tbsp white sugar and vanilla until thick and creamy.
3.      Pour cream into saucepan and heat until it almost comes to a boil. Remove from heat.
4.      Stir cream into the egg yolk mixture.
5.      Pour mixture into ramekins and place them in baking pan half full with water.
6.      Bake for 35 minutes.

If desired, you can add chocolate to mixture to create a chocolate crème brulee.  I would be careful with this and be sure that you have mastered it without the chocolate first.
