Mini Turkey Meatloaf with Spinach Greens Salad

Another favorite...2 of my favorites for the first 3 posts.  We're eating well this week.  I fear it can only go downhill from here.  With this recipe you'll be surprised at how good minced turkey can be.  The hint of nutmeg and the homemade BBQ sauce (also great on anything barbecued) make this mouth watering recipe delicious and leaves you wanting.  Make them, bake them, freeze them for later....if you can wait.

1 slice ww bread, broken in pieces
1/2 cup skim milk
1 1/4 lb ground turkey
1 egg
1/8 tsp nutmeg
2 tbsp fresh grated parmesan cheese
Salt and pepper
3 tbsp ketchup
1 tbsp brown sugar
Hot sauce to taste
1 small onion
1 small red pepper
5 oz bag fresh spinach

1. Sauté chopped onion, pepper and entire bag of spinach; set aside.

2. Combine bread, turkey, milk, egg, nutmeg, parm cheese and salt and pepper in a large bowl.

3. Combine two mixtures.

4. Using 1 cup measuring cup, form mixture into mini meatloaves. Set on sprayed baking pan.

5. Combine ketchup, brown sugar and hot sauce in a small bowl and brush on top and sides of mini meatloaves.

6. Bake at 375 degree oven for 35 min, flip meatloaves half way through and re- baste.

Enjoy! Simple and easy to make but quite delicious!!
