Cinnamon Buns

Mmmm....Goooooood!  With a little direction from her mother, Amy made these around the holidays.   For the icing anything will do but Amy decided to use a Cream Cheese icing.  I'm posting this one as a tribute to the cinnamon bun's Amy and I shared on the plane back from Cancun yesterday.  For those who were wondering where the recipes have been.  Amy and I just got back from the best vacation in sunny Mexico.

Dough:
4 cups flour
1 cup shortening
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon (generous)
½ tsp nutmeg
½ cup brown sugar
1 ½ cup milk

Middle Mixture: ½ cup margarine
                               ¾ brown sugar
                               2 Tbsp cinnamon

1.      Mix the margarine, brown sugar and cinnamon in a small bowl til smooth, set aside.
2.      Add flour, baking soda, baking powder, cinnamon, nutmeg, brown sugar and a pinch of salt in a large bowl.
3.      Cut in shortening (half a block of shortening). Use fingers to work it through.
4.      Add milk, using a fork to mix evenly.
5.      Place flour on the counter, and knead the dough gently until smooth.
6.      Spread mixture evenly over top of the batter.
7.      Roll dough gently to create round dough ready to cut, seal the edges.
8.      Then make roll into desired size (make it the width you want the buns to be)
9.      Cut with knife; use flour on knife.
10.  Bake for 11.5 to 12 minutes at 375 degrees.
11.  Add cream cheese icing if desired.
