Red Pepper Bruschetta

A great twist on your standard Tomato Bruschetta that was introduced to us by my mother.  Thanks Mom!  We love this one.

1/4 cup olive oil
2 cloves garlic, minced
1 small red onion diced
3 sweet red peppers, roasted, peeled and diced
2 TBSP chopped fresh basil

1 baguette
1/3 cup freshly grated parmesan cheese


In skillet, heat oil , cook garlic and onion for 4-5 minutes.
Add red peppers; cook for 5 - 8 minutes or until fragrant and wilted Stir in basil, season with salt and pepper to taste.
