Wonderfully Healthy and Delicious Muffins

A great healthy muffin that can be made full sized or mini.  The recipe is based on full sized muffins but we adjusted the bake time and make them mini.  Another one of our recipes that freezes well to enjoy later.

Dry Ingredients:

1 cup whole wheat flour
3/4 cup wheat bran (whole wheat stone ground)
3/4 cup ground flaxseed
1/4 cup mini chocolate chips
1 tbsp baking powder
1 tsp baking soda
1 tsp cinnamon

Wet Ingredients:

1 1/2 cups mashed bananas ( 4-5)
3/4 cup dark brown sugar
3/4 cup buttermilk
1 omega- 3 egg


In a large bowl, mix all dry ingredients together with a fork.

In a medium bowl, beat all the wet ingredients together.

Pour the wet ingredients into the dry and cook at 400 degrees for twenty minutes. Makes 12 muffins.

We use the same temperature but about 12 minutes to bake the mini muffins.
