A regular occurrence in our house for years...Simple and tasty. Use low fat ingredients for a healthier option.
3 boneless chicken breasts ¼ tsp pepper 1 head of broccoli 10 oz cream of chicken soup, low fat ½ cup low fat mayonnaise Curry powder to taste 1 cup grated cheese
Cook chicken in olive oil and sprinkle with pepper. Steam broccoli until crisp and place in bottom of dish. Place chicken on top.
Mix soup, mayo, curry, and lemon juice. Pour over mixture and top with cheese. Cook uncovered in over 30- 35 minutes at 375 degrees. Serve with rice. |
