Mac and Cheese


Who doesn't like Mac and Cheese?  Easy to make, easy to modify! Season and add whatever you like.  Supper for 2 nights!

2 cups ready cut macaroni
2 tbsp butter
2 tbsp flour
2 cups milk (we use skim)
1 ½ cups cheddar cheese, grated (low fat)
1 tsp salt
½ tsp pepper
¼ tsp dry mustard

Cook macaroni and set aside. Melt butter, then add flour and stir until bubbling. Gradually add milk and stir constantly until smooth and thickened. Add 1 cup cheese and stir until melted. Blend in seasonings.

Place layers of macaroni in greased 1 ½ quart casserole dish. Cover with layers of sauce and some remaining cheese. Repeat ending with grated cheese. Bake for 25- 30 minutes at 375 degrees.
